January can be a bit of a grey month, the festivities at the end of the year have been and gone and we’re left with a long stretch of winter ahead before spring starts to lighten our days and spirits.
Potatoes are quite often spurned at this time of year as they fall out of favour, being labelled as unhealthy. Packed full of vital nutrients which you don’t find in other starchy carbohydrates (such as rice or pasta) they are actually a more rounded dietary choice. They also carry the advantage of releasing their energy slowly, making you feel fuller for longer. It is recommended that as part of a balanced diet one third of your diet should come from starchy carbohydrates.
