It’s Disco Season in Smokey Rebel County!

Discada is Mexican cooking in an agricultural plow disc that yields spectacular Flavors. Also known as Disco Cooker, Plow Disc Grill, Cowboy Wok or Disk Cooker!

The Discada Taco is big in northern Mexico, and a meat lovers dream! Smokey Rebels Revolution and Holy Jalapeño Rubs are a perfect match for these tacos!

Serves 6

1 tablespoons Revolution Rub
1 tablespoons Holy Jalapeño
4 thick-cut bacon slices, chopped
Chopped chorizo
1 large russet potato, cut into 1/4-in. pieces
Kent rapeseed oil
½ pound pork tenderloin, cut into 1/2-in. pieces
½ pound quick fry steak, cut into 1/2-in. pieces
2 hot dogs, cut into 1/2-in. pieces
1 large yellow onion, chopped
1 medium-size red bell pepper, chopped
2 jalapeño chillies, chopped
1 whole Jalapeno
4 large spring onions
2 plum tomatoes, chopped
3 garlic cloves, chopped
¾ cup Mexican style lager beer
½ cup chopped fresh coriander
Corn tortillas
Lime wedges

Cook bacon in a large wok or pan at a medium-high, stirring occasionally, until starting to crisp up, Add chorizo; cook until chorizo and bacon is crispy, Using a spoon, transfer bacon and chorizo to a large bowl, reserving drippings in wok/pan.

Step 2

Add potato, 2 tablespoons of the oil. Cook, stirring occasionally, until potatoes are tender and browned, Transfer potato to bowl with bacon\chorizo mix. Add pork, steak, hot dogs, and remaining 2 tablespoons oil. Cook, stirring occasionally, until browned. Using a spoon, transfer meat mixture to bowl with bacon/chorizo bowl.

Step 3

Add onion, bell pepper, whole jalapeno, spring onions and both the Revolution Rub & Holy Jalapeño rubs; cook, stirring occasionally, until tender, about 8 minutes. Add tomatoes and garlic; cook, stirring often, until tomatoes have softened pour in beer, cilantro, and bacon mixture. Reduce temperature to medium-low; cook, stirring occasionally, until liquid has mostly evaporated keeping enough to serve as sauce with taco, about 10 minutes. Serve on the corn tortillas with spring Onion on side and lime Wedges (cook gets Pitmaster dibs on whole Jalapeño!!)
