What is Zhoug used for?
Zhoug! Green Harissa (often called Schug, Zug or Zoug) is a spicy green coriander chilli paste of Yemenite origin which give a burst of flavours to dishes.
Gluten free. Suitable for Vegans. No artificial preservatives.
Perfect as a Marinade, Dipping sauce, Condiment, Dressing, Glaze.
Pairs perfectly when drizzles over salad, roasted vegetables, or grilled meat.
Mild heat.
Our current favourite recipe Zhoug Pesto Potatoes:
- Par Boil new potatoes.
- Drain
- Smash up the potatoes a little with a masher.
- Add Zhoug (adjust quantity to personal paste)
- Pop into oven and roast. Enjoy!
Other uses/pairings:
- Mixed with roasted vegetables. Good pairings are sweet potatoes, carrots, onions, courgettes, cauliflower and bell peppers.
- Added to a frittata (potatoes, asparagus, onion, eggs and goats cheese)
- Enhance a yoghurt dip (perfect with crudities etc)
- Add to an olive oil/lemon juice vinaigrette (perfect over salad, stirred through grains or as a marinade to meat or fish)
- Gorgeous with white fish
- Add to hummus to give a new twist
- Create a marinade with zhoug, yoghurt, lemon juice and salt before covering meat (chicken or lamb pair well) rest for 2 hours before popping onto the BBQ
- Add to Veggie burgers
- Miz with cream cheese before placing on toasted bread and popping a poached egg over the top.
- Create a curry using Zhoug, onion, chopped tomatoes, chickpeas, sundried tomato paste, cumin and coriander
