The Blanc de Blancs is made from the Chardonnay grape handpicked from our vineyard in 2017. Like the Rose de Noir it has been made using the ‘method champenoise’, going through two fermentations , the second taking place in the bottle where sugar and yeast are added to convert sugar to alcohol and carbon dioxide (the bubbles !) It has flavours of peach and citrus and a fine mousse
