The combination of crunchy nuts, candied in a glossy espresso syrup and seasoned with sea salt, makes for a perfect balance of sweet, salty, and a subtle coffee flavour. Ideal for Christmas gatherings, these candied nuts are easy to make and are sure to disappear quickly from the bowl!

Preparation: Preheat your oven to 190°C. Line a baking tray with foil.
Roasting the Nuts: Lightly coat the nuts in olive oil and spread them on the tray. Roast for 5-10 minutes, just until they are lightly browned. Be sure to keep an eye on them to avoid over-roasting.
Adding the Espresso Glaze: After removing the nuts from the oven, toss them in a small bowl with a few tablespoons of espresso syrup. Make sure they are evenly coated.
Second Roasting with Glaze: Place the syrup-coated nuts back on the tray, spreading them out. Grind a bit of sea salt over the top – the sticky syrup will help the salt adhere. Return them to the oven for about 5 minutes. Watch closely to prevent the syrup from burning.
Cooling: Once the nuts are nicely glazed and sticky, take them out of the oven. For best results, transfer them to a cold plate to cool, preventing the undersides from burning.
Serving: Allow the nuts to cool completely. They should be hard, crunchy, and glazed, with a delightful hint of espresso. Serve and enjoy the addictive blend of sweet, salty, and coffee flavours. Be warned, they’re moreish and might not last long!
