The super sweet Gypsy Tart is a traditional dessert closely associated with the Isle of Sheppey. Its origins are wrapped in local folklore, with the most enduring story suggesting it was invented by a kind-hearted woman who wanted to feed undernourished gypsy children playing near her home. With limited ingredients, she whipped together evaporated milk and dark muscovado sugar, pouring the mixture into a shortcrust pastry case and baking it into a light, sweet tart. The result was a rich, caramel-flavoured dessert with a smooth, almost mousse-like texture.

The tart gained popularity in Kent during the mid-20th century, particularly in school canteens, where it became a nostalgic favourite among generations of children. Its intense sweetness and simple preparation made it both affordable and satisfying - a classic example of resourceful British home baking.

Though its popularity has waned nationally, Gypsy Tart remains a point of regional pride on the Isle of Sheppey and throughout Kent. Bakers still make it in its traditional form, and it often appears in local cafés and bakeries.
