Starring the company’s best-selling Strawberry & Champagne Extra Jam, this easy-to-make dessert layers crisp meringue, whipped cream, and fresh strawberries with generous spoonful’s of the decadent preserve — creating a show-stopping summer treat.

Strawberry & Champagne Eton Mess
Serves: 4 | Prep Time: 15 minutes | No Cooking Required

Ingredients:

  • 300ml double cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla extract
  • 100g The Wooden Spoon Strawberry & Champagne Extra Jam
  • 200g fresh strawberries, hulled and halved
  • 4 large meringue nests, roughly crushed
  • Fresh mint leaves (optional, for garnish)

Instructions:

  1. Whip the Cream:
    In a large mixing bowl, whip the double cream with the icing sugar and vanilla extract until soft peaks form.
  2. Prepare the Strawberries:
    Reserve a few strawberry halves for garnish. Gently fold the rest into the whipped cream along with The Wooden Spoon Strawberry & Champagne Extra Jam. Swirl it lightly — don’t overmix, so you keep a beautiful marbled effect.
  3. Assemble:
    In individual serving glasses or a large trifle bowl, layer the crushed meringue with the cream mixture. Add another small spoonful of the jam between layers for extra flavour.
  4. Finish & Serve:
    Top with the reserved strawberry halves, a drizzle of jam, and a sprig of fresh mint. Serve immediately for the perfect summer dessert.

Serving Tip:

Chill your serving glasses in advance for an extra-refreshing finish on a warm day. This recipe can also be adapted with raspberries or mixed berries for a twist.
