Veganuary

Feeling inspired to try out the vegan lifestyle this year? Veganuary is a great place to start! Spend the month trying out new flavours, dishes and ingredients and who knows, you might feel it's the perfect thing for you to carry on throughout the year. Getting started couldn't be easier with vegan dining at The Ferry House. Recently awarded their second AA Rosette in Culinary Excellence, menus showcase rare and heritage produce varieties that are grown in their 1.5 acre Kitchen Garden, home to over 150 varieties of produce throughout the year. January is peak root vegetable season and also gives the opportunity to show the more creative things they get to do with our plant based offerings. Head Chef, James Pilcher, is passionate about zero waste and using all parts of the produce, even the parts most would throw away. His favourite dish on the vegan menu for showcasing this creative way of cooking is the Carrot 'Nduja' Ravioli. For this dish they lactose ferment the carrot trim from their Sunday roast carrots with Kitchen Garden-grown red peppers and a little garden chilli, to give the distinctive sour note of a salami. This is then seasoned with garden onion ash for a smoky note, some red miso paste and paprika. This is used as the filling to the homemade vegan pasta, served with garden heritage carrots that have been slow roasted in the Harrison charcoal oven, and a Chermoula made from the garden carrot tops. Enjoy a unique and delicious vegan dining experience that will leave you wanting more this January (and throughout the year) at The Ferry House.
