Earlier this year, we took a big step and moved part of our brewery operation to a new farm site in the Kent countryside.
Since then, something rather different has been growing alongside the brewery. Our gourmet mushroom production is now up and running, and we're harvesting our first crops of beautiful oyster and pearl mushrooms.
The idea grew from looking at how we could make better use of everything we create. Brewing produces spent grain once all the goodness needed for the beer has been extracted, and rather than seeing that simply as something left over, we began exploring what else it could become. Growing mushrooms has opened up an entirely new area for us and one that sits surprisingly naturally alongside brewing: both rely on understanding ingredients, conditions, time and a fair amount of experimentation.
It’s still early days, but seeing our first mushrooms being harvested feels like a significant milestone for the farm. The site is gradually becoming a home for brewing, growing and experimenting, as well as part of the next chapter for ANNO Distillers. There’s plenty still to do, but we’re excited by what’s beginning to take shape – and, knowing our brewer and distiller Jon, there will undoubtedly be a few more experiments along the way.
