This month, they’re sharing a summer-ready twist on their classic Chicken Curry Kit – perfect for firing up the BBQ.

Cardamom & Lemongrass BBQ Chicken Skewers

A smoky, citrusy take on Sri Lankan street food – ideal for warm evenings and sharing with friends.

What you’ll need:

  • 1 Chicken Curry Kit (you’ll be using the dry spice mix + lemongrass)

  • 500g chicken thighs, chopped (or use paneer for a vegetarian option)

  • 2 tbsp plain yoghurt

  • Juice of 1 lime

  • 1 red onion, cut into chunks

  • 1 bell pepper, cut into chunks

  • Skewers (metal or soaked wooden ones)

Optional extras:

  • Flatbreads

  • Simple yoghurt dip (plain yoghurt, squeeze of lemon, pinch of spice mix)

How to make it:

1. Marinate the chicken
In a large bowl, combine the spice mix with yoghurt and lime juice. Stir through the chicken pieces until well coated, then cover and leave in the fridge for at least an hour – or overnight if you’re feeling organised.

2. Build your skewers
Thread chicken, onion, and pepper pieces onto your skewers. Slot in bits of lemongrass between chunks to infuse extra aroma while they cook.

3. Grill away
Place your skewers on a hot BBQ or grill and cook for 10–12 minutes, turning every few minutes until nicely charred and fully cooked through.

4. Serve and enjoy
Plate up with warm flatbreads, a zingy yoghurt dip, and a scattering of herbs. Add an extra squeeze of lime or a pinch of crushed cardamom if you're feeling fancy.
