Winterdale’s cheesemaking tradition comes from a family farm that’s been in operation since 1495. Today their dairy is based in a traditional oak-framed barn on the North Downs. Unpasteurised, fresh, retaining all those natural flavours. That milk is turned into curds, pressed the traditional way, wrapped in muslin cloth, and then matured for around 10 months in a cool cave carved into chalky Kent hillside. What you get is a cheese with real depth.

Winterdale is proud to produce the UK’s first carbon-neutral cheese. Thanks to a mix of a ground-source heat pump, solar power, and clever use of the natural chalk cave for maturing, their carbon footprint is minimal. Fun fact: their cheese is transported to retailers using an electric vehicle powered by their own solar energy.
