There's a layer to the local food story that almost never gets talked about. Not the producers with the market stalls and the handwritten labels - though we love them dearly - but the businesses quietly making sure the food you eat, at a Kent restaurant, a London hotel, or out of your own freezer, actually tastes good.
Blue Oceans Seafood have been in the seafood supply chain since the 1970s, now in their third generation as a family business. They're the UK's only Kent-based breaded whitebait producer - and honestly, if you've ever had whitebait on a pub menu anywhere in the country, there's a fair chance it came from them. They've recently opened a brand new processing facility, the first of its kind in Kent, so the next chapter is looking ambitious.
In Margate, Speciality Breads have been quietly baking exceptional bread since 1996 - not for supermarket shelves, but for the restaurants, pubs, hotels and caterers who need it to be genuinely good. Over 100 products, all hand-finished by master bakers, using 100% British flour from Red Tractor accredited farms. They're also working toward B-Corp status and net zero, which tells you something about how they think. If you've eaten a really good bread roll in a really good restaurant and wondered who made it - it might have been them.
And then there's Stephens Fresh Foods, based right here in Medway, home of the Famous Kent Honey Baked Ham since 1974. They supply leading catering butchers and food-to-go manufacturers with award-winning cooked meats and continental charcuterie - traditional curing methods, modern technology, and a BRCGS AA accreditation that speaks for itself. The kind of business that keeps the whole supply chain honest.
Finally, Foodari bring it all together. Fifteen years devoted to sourcing and supplying outstanding fresh produce, working across foodservice and catering - restaurants, hotels, schools, visitor attractions - and wholesale. They work with Kentish growers, British producers, and international suppliers, threading provenance and traceability through everything they do. A Michelin-starred kitchen and a school canteen can both rely on Foodari for the same thing: produce that's genuinely good and genuinely traceable.
That's sort of the point, isn't it? These businesses don't need the spotlight to do what they do brilliantly. But they deserve a moment in it. Next time you eat something exceptional - in a restaurant, a pub, a school canteen, or at your own kitchen table - there's a reasonable chance one of these Kent businesses helped make it happen.
